Peasant's Pot Sausage and Potato Soup
This hearty and rich chowder can easily be a meal on its own. It's got a pretty long ingredient list, but they add many layers of flavor.

Ingredients
1 TbspButter
1 poundFresh mild Italian or Polish sausage, remove from casings if applicable.
1Medium onion, chopped
2Cloves garlic, finely chopped
⅛ tspCrushed red pepper
2Large potatoes, peeled and cut into small (1/2") cubes
½Jalapeno, seeds removed and finely chopped
214-oz cans of fire roasted diced tomatoes
1Red bell pepper, chopped
½ cupApple juice
1 cupFrozen corn
1 tspItalian seasoning
1 tspThyme (dry)
¼ cupSherry or cooking sherry
32 ozChicken stock
1 tspChicken bouillon concentrate or one bouillon cube
¾ cupHeavy cream
1 cupGrated Parmesan cheese
3-5 TbspCorn starch
to tasteSalt and pepper
Preparation
1. In a skillet , add the corn (1 cup), jalapeños (½), and chopped red bell pepper (1). Add a small amount of oil if it's not a nonstick skillet .
2. Cook on medium high heat, stirring occasionally until corn begins to brown.
3. Remove from heat.
4. In a large pot over medium heat, melt the butter (1 Tbsp).
5. Add the sausage (1 pound), chopped onion (1), and garlic (2).
6. Break sausage apart as it cooks. Stir frequently until sausage is cooked through.
7. Add the potato pieces (2), corn (1 cup), jalapeños (½), and the red bell pepper (1) from the skillet .
8. Add all remaining ingredients except corn starch to the pot.
9. Simmer gently for at least one hour, until the potatoes start to break apart and thicken the soup.
10. Taste and adjust seasoning (salt and pepper).
11. If the soup is still too thin, combine 3 Tbsp of corn starch with 3 Tbsp of water, then add to the soup, and allow 5-10 minutes for it to thicken.
12. Add additional corn starch and water if necessary to reach desired consistency.
