Shrimp Fried Rice
Basic Shrimp fried rice recipe

Ingredients
2Eggs
2 tspNeutral oil (peanut, canola, corn, grapeseed)
3Scallions (Green onions)
3 cupsCooked and cooled rice (white or brown)
2 clovesFinely chopped garlic.
3 tspSoy sauce
for veggie:Additional finely chopped veggies as desired: Carrots, Broccoli, Onions, Zucchini, Mushrooms, Peas. 1 cup total.
for shrimp:Shrimp - Small, raw, peeled and deveined. About 10-12 ounces
for chicken:Raw chicken breast, chopped in to small (1/2-inch) pieces, about 1 chicken breast.
Preparation
1.  Add eggs (2) and 2 Tbsp water to a small bowl . Beat gently and set aside.
2.  Heat oil (2 tsp) in a wok or large pan on med-high heat.
3.  Add scallions (3) and garlic (2 cloves) and cook for 1 minute.
4.  Add shrimp (10-12 ounces), chicken (1 breast), and additional veggies (1 cup total).
5.  Cook, stirring constantly, until the protein is cooked through.
6.  Push the pan contents to the edge of the pan .
7.  Add the eggs (from step 1) and scramble until cooked.
8.  Add the cooked rice (3 cups).
9.  Stir to combine and season with soy sauce (3 tsp).
10.  Add a small amount of additional oil (if needed).
