Classic Meatloaf
One meatloaf please. Lean ground beef is a good idea here.
60-90 minutes,   4 servings

2 pounds Lean ground beef, or 1 pound beef and 1 pound ground pork
1 Onion, finely chopped
2 Eggs, slightly beaten
1 Green bell pepper, finely chopped
20 Saltine crackers roughly smashed
¼ cup Milk
to taste Salt and pepper
3 strips Bacon
⅓ cup Ketchup
1.  Preheat oven to 375 degrees
2.  Mix meat, onion, eggs, bll pepper, saltines, milk, salt and petter in a bowl.
3.  Form into a loaf or brick shape and place on a cookie sheet lined with foil, or press into a loaf pan.
4.  Cover with bacon strips and ketchup.
5.  Bake until loaf is 165 degrees internal temperature in the center. Time will vary depending on pan. E.g., 60 minutes for cookie sheet, 90 minutes for pan. Best to use a thermometer.
6.  Let rest for 10 minutes before serving.
