2 pounds | Lean ground beef, or 1 pound beef and 1 pound ground pork |
1 | Onion, finely chopped |
2 | Eggs, slightly beaten |
1 | Green bell pepper, finely chopped |
20 | Saltine crackers roughly smashed |
¼ cup | Milk |
to taste | Salt and pepper |
3 strips | Bacon |
⅓ cup | Ketchup |
1. Preheat oven to 375 degrees |
2. Mix meat, onion, eggs, bll pepper, saltines, milk, salt and petter in a bowl. |
3. Form into a loaf or brick shape and place on a cookie sheet lined with foil, or press into a loaf pan. |
4. Cover with bacon strips and ketchup. |
5. Bake until loaf is 165 degrees internal temperature in the center. Time will vary depending on pan. E.g., 60 minutes for cookie sheet, 90 minutes for pan. Best to use a thermometer. |
6. Let rest for 10 minutes before serving. |
