Classic Meatloaf
One meatloaf please. Lean ground beef is a good idea here.

Ingredients
2 pounds Lean ground beef (2 pounds) or 1 pound beef and 1 pound ground pork
1 Onion, finely chopped (1)
2 Eggs, slightly beaten (2)
1 Green bell pepper, finely chopped (1)
20 Saltine crackers, roughly smashed (20)
¼ cup Milk (¼ cup)
to taste Salt and pepper (to taste)
3 strips Bacon (3 strips)
⅓ cup Ketchup (⅓ cup)
Preparation
1.  Preheat oven to 375°F.
2.  Mix lean ground beef (2 pounds), onion (1), eggs (2), green bell pepper (1), saltine crackers (20), milk (¼ cup), salt and pepper to taste in a bowl.
3.  Form into a loaf or brick shape and place on a cookie sheet lined with foil, or press into a loaf pan.
4.  Cover with bacon strips (3) and ketchup (⅓ cup).
5.  Bake until the internal temperature of the loaf reaches 165°F in the center. Time will vary depending on the pan; e.g., 60 minutes for cookie sheet, 90 minutes for pan. It is best to use a thermometer.
6.  Let rest for 10 minutes before serving.
