Ingredients
1/2 cupLight coconut milk
2 TbspBrown sugar
2 TbspReduced-sodium soy sauce
2Minced garlic cloves
1/2 tspGround cloves
6Boneless skinless chicken thighs (about 1.5 lbs.)
6 TbspFlaked coconut, toasted
to tasteMinced fresh cilantro
Preparation
1.  Combine (1/2 cup) light coconut milk, (2 Tbsp) brown sugar, (2 Tbsp) reduced-sodium soy sauce, (2) minced garlic cloves, and (1/2 tsp) ground cloves in a large bowl .
2.  Place (6) boneless skinless chicken thighs in a 3-qt slow cooker .
3.  Pour the coconut milk mixture over the top of the chicken.
4.  Cook, covered, on low for 4-5 hours or until the chicken is tender.
5.  Serve the chicken with (6 Tbsp) flaked coconut and (minced fresh cilantro) to taste.
