6 | Boneless skinless chicken thighs (about 1 1/2 lbs.) |
to taste | Minced fresh cilantro |
6 Tbsp | Flaked coconut, toasted on stovetop |
1. Combine 1/2 cup light coconut milk, 2 tbsp brown sugar, 2 tbsp reduced-sodium soy sauce, 2 minced garlic cloves, and 1/2 tsp ground cloves in a large bowl. |
2. Place 6 boneless skinless chicken thighs in a 3-qt slow cooker. |
3. Pour the coconut milk mixture over the top of the chicken. |
4. Cook, covered, on low for 4-5 hours or until the chicken is tender. |
5. Serve the chicken with 6 tbsp flaked coconut and minced fresh cilantro to taste. |
