Shrimp and Edamame with Lime
Healthy and fresh shrimp dish with green veggies and fresh lime

Ingredients
2 cupsYour favorite rice, cooked
1 TbspExtra virgin olive oil
16-20 ouncesRaw medium shrimp, peeled and deveined
1Garlic clove, minced
2 cupsFrozen shelled edamame, thawed (one 10 ounce package)
5Green onions, halved lengthwise and cut in to 1 inch pieces. Separate white and green parts.
1Lime: Juice from half (1 Tbsp) and other half cut in to wedges for serving
to tasteSalt and pepper
optionalChopped cilantro for garnish
Preparation
1.  Cook the rice.
2.  In a skillet , heat the extra virgin olive oil (1 Tbsp) over medium-high heat.
3.  Add the minced garlic (1) to the skillet and sauté for 30 seconds.
4.  Add the raw medium shrimp (16-20 ounces) and cook, stirring occasionally, for 4 minutes.
5.  Add the white part of the green onions (about half of 5) and the edamame (2 cups) to the skillet .
6.  Continue cooking and stirring until the shrimp is fully cooked.
7.  Add the green parts of the green onions and lime juice (1 Tbsp).
8.  Cook for an additional minute.
9.  Season to taste with salt and pepper.
10.  Serve the shrimp and edamame with rice and lime wedges.
11.  Garnish with chopped cilantro (optional).
